These muffins are the best combination of oaty-brown sugary goodness. They make a perfect option for a quick breakfast, and are served best warm, with a little butter, and tea on the side!

For the Muffins:
  • 1 cup old-fashioned oats
  • 1½ cups all-purpose flour (I use unbleached)
  • 2 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • ¾ cup light brown sugar
  • ¾ cup 2% milk
  • ⅜ cup vegetable oil
  • 1 tsp vegetable oil
  • ¼ tsp cinnamon
  • ⅓ cup craisins
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a medium bowl, combine oats, flour, baking powder, and salt. Stir to combine.
  3. In a second bowl, whisk together the remaining ingredients.
  4. Add the dry ingredient mixture into the wet mixture, and mix until moistened.
  5. Pour ¼ cup-fulls into greased or paper-lined muffin cups.
  6. Bake for 15-17 minutes, or until a toothpick inserted in a muffin comes out clean.
